The Beginning

こんにちは (konnichiwa) — thank you for visiting AinaKo.

My name is Dallen, and I’m the founder of AinaKo. I was born and raised in Hawaii, but I’ve been living in Japan for more than 17 years.

Tea has been part of my life for as long as I can remember. Growing up, my great-grandmother always kept several kinds of Japanese tea in our home. Some of my favorite memories are of eating at local Japanese restaurants with my family and finishing the meal with the best matcha ice cream — a flavor that stayed with me long before I truly understood what matcha was.

I never imagined that years later, I would move to Japan and find myself surrounded by some of the finest tea and matcha in the world.

What drew me most to Japan was the people. I’m always in awe at the love, dedication, and care they put into their work. Over the years, I became deeply inspired by the level of craftsmanship found throughout Japan.

In Japan, you’ll find many people who spend decades mastering a single craft. Whether it’s growing tea, preparing food, forging knives, or cultivating produce — there is a deep respect for craftsmanship here: a belief that even the smallest details matter, and that creating something truly exceptional takes patience, discipline, and lifelong dedication.

Japan is known around the world for extraordinary products shaped by this dedication: beautifully grown fruits, carefully raised wagyu, handcrafted goods, and some of the highest quality tea in the world. Behind these products are artisans and workers who completely devote themselves to the perfection of their craft.

This spirit of craftsmanship — known in Japanese as 匠 (takumi) — became one of the foundations of AinaKo.

 

Why AinaKo was Started

The longer I live in Japan, the deeper my respect and inspiration for these artisans grows. It’s not uncommon to find people working into their 90s in Japan, driven by the desire to make their customers happy. These workers exemplify the true spirit of craftsmanship. I love supporting their businesses, and I always wish I could do more.

I eventually realized I could combine my passion for sharing Japan with others with supporting the hard-working people here. From this idea, AinaKo was born.

AinaKo was started out of the love for sharing Japanese products with people around the world so they can experience Japanese dedication firsthand, while also supporting the hard-working people who create these wonderful products.

 

Why Matcha?

Over the past few years, matcha has rapidly grown in popularity around the world. Demand has increased so much that even in Japan, many tea shops regularly sell out of matcha. Some of the small, family-owned tea shops I thought most tourists would never find also sold out of their matcha!

While I’m happy to see Japanese tea farmers and matcha receive more support worldwide, I’ve also noticed that some products seem to prioritize trends and marketing over craftsmanship and quality.

I wanted to create something different.

Rather than chasing trends, I wanted to share matcha that reflects the care, balance, and dedication that make Japanese tea culture so special.

Living in Japan as a matcha lover myself, I knew I had the opportunity to search for matcha that was thoughtfully grown, carefully evaluated, and enjoyable to drink every day — whether you are completely new to matcha or have appreciated it for years. Combining my knowledge of matcha along with tasting dozens of samples from farms across Japan, I eventually found what I was looking for.

Our first product is an expertly blended matcha made from first-flush leaves grown in Kagoshima. What makes it unique is its use of different cultivars (plant varieties), which are carefully evaluated by tea experts in Kyoto for taste, color, aroma, and appearance. The matcha is then thoughtfully blended to highlight the best characteristics of each cultivar, resulting in a smooth, balanced, and easy-to-drink matcha with low bitterness.

My goal is to continue growing AinaKo and introduce more Japanese products I truly love to people around the world, so please stay tuned.

 

The Meaning Behind Our Name

The name AinaKo has both Hawaiian and Japanese roots.

In Hawaiian, ʻāina means “land” or “that which feeds.” In Hawaiian culture, the land is deeply respected because it nourishes and sustains life.

In Japanese, AinaKo is written as 愛和子.

  • 愛 - Love
  • 和 - Harmony, peace, and Japan
  • 子 - Child

Together, the name AinaKo reflects a love and respect for nature, Japanese craftsmanship, and commitment to others — values that continue to inspire everything we do.

Our logo features three origami cranes arranged in a triangle to represent the bonds that form AinaKo: nature, craftsmanship, and love.
